Potatoes are planted  and harvested yearly.  You do not seeds.  Store a potato in a warm spot, not too sunny but not dark.  The potato will get soft and sprout eyes.  Each eye is  potato 'sprout'  Cut out the eye with a least a 1/2  cube of potato attached.  Plant the eye completely under the surface but not too deep- an inch or two- as soon as there is not threat of a hard serious frost.  In most of the U.S. April is fine.  In the far North wait until May.   It will grow and become potato plant with plenty of potatoes to harvest.

    If you dig them up carefully, starting a foot away from the plant you can harvest small 'new' potatoes and leave the others to continue growing.  

    Potatoes need cold nights to come to ideal potatoes for harvesting and storing.  Harvest before strong freezes start. The new potatoes you pick a bit early are hard to store, eat them  right away.
