I'm not talking professional or anything but to work at an average Japanese restaurant.

  1. About 20 years.

In Southern California, sushi lovers will contract trainees reaching the end of their training, secure a house for them, build a restaurant, and sponsor their entry into the country. All for authentic sushi. It isn't easy.

  2. It depends on the individuals learning curve and how quickly you can learn. Usually you learn by watching/practicing so your best bet would be to work at a Japanese restaurant and work under their head sushi chef.
