  1. I wouldn't boil it.To save the color and nutrients, you should steam it.

    Place about an inch of water in large sauce pan,Place cauliflower in steamer basket on top of pan.Steam for about 10-12 minutes.or till fork

    will insert easily.

    This is a low-carb stand-in for mashed potatoes. The spices and cream that are added to steamed and pureed cauliflower give this dish the taste, texture and appearance of mashed potatoes.     1 head cauliflower, cut into florets

    3/4 cup water

    1 tablespoon cornstarch

    1/3 cup heavy cream

    1 teaspoon granulated sugar

    3/4 teaspoon salt

    1/4 teaspoon white pepper

    1/8 teaspoon garlic powder

    1/8 teaspoon onion powder

    Directions

    1Divide a head of cauliflower into florets that are all roughly the same size.

    2Steam cauliflower pieces over boiling water (15 to 20 minutes), or until the cauliflower is tender.

    3Drain the cauliflower and toss it in a bowl of ice water to bring the cooking process to a screeching halt.

    4When the cauliflower has cooled, put the florets in a food processor along with 1/2 cup of water.

    5Puree the cauliflower on high speed until smooth, but with some very small pieces of cauliflower remaining in the mix for just a bit of texture.

    6Pour all of the pureed cauliflower into a medium sauce pan.

    7Dissolve the corn starch in the remaining 1/4 cup of water and add the solution to the cauliflower.

    8Add the cream, salt, white pepper, garlic powder and onion powder to the cauliflower and stir.

    9Set the saucepan over medium heat and cook, stirring often, for 5 to 10 minutes, or until thick

  3. That depends on how tender you want the cauliflower.  Test it with fork and taste it. 5 to 10 minutes tops for me.


  4. Boil the water first and then add the cauliflower wait for 3-5 minutes. and then strain the water.

  5. If you are making cauliflower florets steam them don't boil... if you are making mashed cauli then boil them until they are tender when pricked with a fork.

  6. 5 to 10 depending on how soft you want them. I like a lil bite to mine so probably 7 min in very lil salted water on med. Poke with a fork to see for yourself. You can steam them in the microwave in a safe bowl with a lid. Put a couple tablespoons of water n lil salt, same thing few minutes. Test them. my grandma use to boil the heck out of them, they were soft, they tasted good with sauce but boiling like that takes all the nutrients and most of the good flavor out in to the water!!!!

  7. If you steam it you will be able to keep more of the nutrients.  It take about the same amount of time too.  I just have to poke a fork in it to see how hard it is still.  Some poeple like a more crisp cauliflower than others.
