You will have to change trains 3 times, and it will take you around a week or more, with inevitable delays along route.

The four trains you will have to take from Vancouver to Montreal if you want to ride Amtrak:  Amtrak Cascades, Empire Builder, Lakeshore Limited, then the Adirondack.

If you take VIA Canada, you only have to change trains once, and you don't have to clear customs.  From Vancouver to Toronto, then Toronto to Montreal.
