When filling out the papers and emergency cards, Can i complete it one day before school starts?

i think that will be kind of late. because the school probably does schedules for students a week or so prior school starts. and if you complete the papers a day before and return it to them before school starts, you'll probably wont be starting school a week or so after the first day of school.
