Question:

How long does pickled ginger last--refrigerated--in those little plastic packets they put with sushi?

I've been collecting them for a long time--as I buy the sushi I often throw those little still sealed packets in the fridge--and some of them have been there well over a year now. Are they still good to eat?

  1. As pickles contains vinegar, it is not advisable to keep them in plastic sachets at all - should be eaten within a day or two. Perhaps you should transfer the pickle ginger into a sterilised glass jar (put the empty jar into slow boiling water for 15 mins before inverting to dry). You can also buy bottled pickle ginger from Asian condiment shop if you like it so much.


  2. Only about 2 days before it turns into mush for the fresh stuff but as long as it's is a presealed processed packet and is still sealed it should be ok for up to 12 months.

  3. If it is unopened it will last forever. I have some in a jar that is perfectly fine and it has been around for several months. Still tasty, still fine. It is pickled -- that is why they do it -- to preserve it.
