It depends. Most freeze-dried foods do have an expiration date on the package. I know Backpackers Pantry and Mountain House have a "Sell By" date on the packaging. Having said that, I have kept and used backpacking food LONG after the "sell by" date. I will throw out food I have in storage after 5 years. It's difficult to say all foods will last 5 years, but I wouldn't push it past then. The vacuum seals in the bags does start to wear out and the plastic and mylar packaging will start to deteriorate. Some foods, especially pudding mixes and various other desserts are packaged in simple plastic bags. They usually don't last as long as the higher grade foods packed in the mylar lined bags.

Also, the longevity of your food will be affected by how and where you store it. Keeping that stuff in a pantry or basement that is relatively cool and light free will allow you to store it for 5 years. Keeping it in a box in the attic or in a storage shed with no constant temperature control will definitely lessen the shelf life.

Lastly, the majority of these foods are still fine to consume even after the expiration date has long passed provided the packaging is sealed and intact. What happens is that the flavor becomes affected by time and packaging. Last year, I cooked up some Mountain House Beef Stroganoff I had in storage for 4 years and compared it to a bag I bought that week. Upon examining the food before cooking, I couldn't notice anything really different, however, the newer meal did have a slightly better taste than the one that had been sitting around.
