until the shell turns a bright red color.  you know how it looks when you get it at a restaurant?  you are looking for the same thing.  it's pretty quick, unless you have a gigantic lobster.  but, the tell-tale sign that your lobster is done is the color.

Depends, how big.  But a general rule is 12-15 minutes...1/2 hour would make it rubber.
