How long should i cook filet mignon?

I want to put them in a skillet to brown and then in the oven. How long and at what temp so i do this? I am just making them with some butter garlic and red wine.

  1. One of the things that separates humans from animals is the ability to use fire to cook our food. Forget that bloody meat stuff and do this: sear your 1 and a half to 2 inch filets in the pan, 4 minutes on each side. Then in a 425 degree oven for 20 minutes. This will give you medium well, just a bit of pink, and much less risk of infection.

    I know people will say they've eaten steak and sushi for years and they're fine, but I have several nurses and doctors in the family and I know the reports that people don't talk much about when it comes to the rate of infection from undercooked foods.
