  1. do it once a week...if i got in a roast that was indeed 30#, yes i would cut it in half...place in a pan with 2 inches or so of water in the bottom..season all sides with salt, pepper, garlic, carrots, celery, onion. rosemary, etc. whatever you like....cover pan with a couple of layers of plastic wrap and then a couple of layers of foil.  Bake for about 8-9 hours in your oven at 180 or 200 degrees.  You will have to check and make sure that it doesn't need further cooking (ovens vary greatly)  it should be very tender.  Use the juices to make a pan gravy.

  2. 30 minutes per lb at 180C

    That would be 15 hours.

    Check the weight.

  3. I would not attempt a 30 lb roast - by the time the center is warm enough to be rare, the outside would be worse that leather.

Try cutting it in more manageable portions, or going to a restaurant and talk to them about using their convection oven.

    Good luck!

  4. Cut the roast in half then roast. I think 30 min a pound is to long. Go to the food network web site and look up the time table for roasting meat.

    Good luck. Sounds yummy
