High enough that you don't have to bend over to use it. Figure out how tall you want the surfaces to be and measure how big the bricks are, add enough bricks until it's tall enough.

The cooking surface should be 36" above the floor.  if you are building a base to set a barbecue on, set the barbecue on a flat surface and measure up to the grill surface.  Subtract that number from 36" and the remainder is the height of the bricks you should achieve.
