  1. The above answers are spot on but also consider tayloring your needs depending on whether or not it will be self-serve (buffet style) or it will be fixed portions.


  2. Wow!!  Why brisket??  Rule-of-thumb, 1/4 # meat per person, but that is cooked.  Brisket must be slow cooked because of toughness, shrink from a brisket can be great, plus trimming the extra fat, feeds no one.

  3. Pulled pork BBQ is far easier and alot less costly.

    You can feed 150 people with about 10 Boston Butts at 7# each. Not shoulders or picnics, the real butts. Slow cook them to 190 degrees f, and shred  for sandwiches.

    Brisket depends on whether or not you cook whole briskets, flats or points. Flats are fairly lean, points are quite fatty and have better flavor but more waste. If brisket gets over cooked it's bad.

    Pulled pork is fairly easy.
