    it also depends how it is prepared

    there is a sister of kabsa recipe, that is the (roz bokhari)

    the authentic traditional recipe is a killer: you gotta prepare it not with oil, but wiht the sheep fat (they take the fat, heat it, melt it and cook with it)

    people who invented this recipe used to live in the mountains in the snow. we inherited it here in saudi arabia but we live in desert weather .. so you can imagine what it can cause

    I guess how many calories depends on the method of preparation..

    Some cooks use ghee (pure cow butterfat) in cooking and some use just regular corn oil (and myself i use none cause of dietary concerns).. and the amount of fat on the lamb being used (also you didnt say whether it was lamb, beef, or chicken kabsa) all 3 have different varying degrees of fatty meat..

    Have you seen some of those huge lamb dishes with loads of boiled fat with it... I myself have the butcher trim every last micro inch of fat off my meat, but some love it and claim it makes for tastier kabsa..

    anyways.. having said all this..

    the amount of calories in one plate full of kabsa is probably enough to last you 2 or 3 days worth... hahahaha!..

    but it sure is goooooooooooooooood!....

  4. no clue what so ever!! i'm a jeddawi...so we don't really eat Kabsa on a daily or even weekly basis...

    as the others already said...it really depends on how you prepared it and with what...but i can't deny, food made with ghee is way more tastier, and cooking with the lambs fat(loads and loads) make the meat soft as butter....

    besides my "weight concious model-like vegetarian" girlfriends i suddenly found myself surrounded by in the last 4 years...i can't think of saudis that do not enjoy food the way it should be enjoyed...that's one of the beautiful things about us...and no, it doesn't mean that the way we eat is why a lot of saudis are obese or unhealthy...it's actually that they still eat the way they did hundreds of years ago just without all the activities... (i myself eat like a pig ;) honest to god...but weigh 46 Kg and i'm 5'1" in my late 20s with 2 kids) nothing i hate more than counting calories!
