Since you're in recovery from anorexia, the normal 3,500 calories=1 lb doesn't really apply. I myself am in recovery, and have been for almost two months now. I was eating 0-300 calories a day, and then ended up being hospitalized for a week. In the hospital they started me at 800 calories a day, and then by the end of the week I was at 1,100. Then, I was put at 1,200 for about 2 weeks, then 1,500, and now, a little less than 2 months later I am at 1,800. In a couple days I will be bumped up to 2,000 and within a month I will be up to 2,500. So far I haven't gained and kept a pound. There was an initial increase, then drop, then increase, then steady, then drop, etc.
I guess my point is, calorie counting is ok, and even crucial for some. My nutritionist has me using sparkteens.com to upload all of my food, and she has my password so she can look at it whenever she wants. Don't just jump into eating "normally" and don't try to use the traditional methods of weight gain/loss. Your bodies metabolism is a wild card right now and there is no telling what it is doing to the food that goes inside your body. Good luck with recovery :)
