  1. One. It gets confusing when a two-headed calf is born and it's still just one head though. Luckily they don't live long.


  2. it isn't always one, i went to my cousins house in Utah, and her husband is a real cowboy, well he said that a "head" of cattle consists of a cow but can also include her calf, in Utah you are allowed to let your cows to roam on state land, as long as they are somehow branded, and you have to pay by the "head", a baby just counts along with its mother

Ashley is correct.  I was the business manager for the 6th largest ranch (in terms of size of herd) in the US.  On a cow-calf operation (which means you are raising calves to sell), it includes the momma cow and her calf.  You count only the mommas.  How many head in a 15,000 cow-calf operation?  15,000.  But at certain times of the year this will mean about 28,000 cattle.  However, if you are not in a cow-calf operation, one head equals one cow.
