How many different types of fresh veggies freeze well? and thaw out good enough to eat.

Most stuff I freeze I end up throwing away.  If you par boil it for a minute before packing it is a little better.  corn I remove from the cob that's eatable, especially in dishes.  Like tamale pie.

Peppers are good.  Spinach wasn't bad but I cooked it and added bacon and onions.  The squash wasn't to good, but peal it and then it mushes up in the soup and it is eatable.  The egg plant was uneatable.

Like tough little pieces of paper.
