If you're asking how many hydrogen atoms (hydrogen is an atom, water is a molecule) can stretch from one end of VY Canis Majoris to the other, the answer is that you would need approximately 1.168 octillion hydrogen atoms to span the diameter of VY Canis Majoris, assuming the most liberal accepted estimate of a diameter of 4200 solar radii.  If you're not familiar with an octillion, it's a million trillion trillion - a staggering number, indeed.
