Neither of those figures. It's about 70-250, depending on what you count as a "joint" (from movable joints alone right up to including the teeth, skull sutures, etc.). Think about it - there are 206 bones in the adult human body, and most just connect to one another at either end, counting as one joint per bone. It's certainly nowhere near 360 - you'd need almost every bone to have three connections to other bones.

There are a number of apologist websites claiming a figure of 360 joints to match a claim in a particular Islamic hadith, but this figure can only be reached with some creative fudging of the figures. This incorrect claim is extensively debunked in the third link given in sources.
