How many monsters can you set on the field each turn playing yu-gi-oh?

Up to 5, you can only set, normal, or tribute summon once per turn. But you can special as many times as you want if you have the space.

1 normal summon, and as many monsters you can on your field for tribute and special summons.

for normal sets just one and maybe not that if you're playing the tribute version... for special summons i'm guessing as much as the effect of the card will give you
