First of all it was centuries(around 400 CE(common era, the archaeologists and historians form of AD) to about 1500/1600 CE.  Secondly, it would depend on what region of the world.  During the middle ages there were likely hundreds of instruments, many of which survive to this day in one form or another.  Example:  The guitar is based off of the lute, a stringed instrument that dates back at least as far as the ancient greeks.
