there is 1 shot of espresso in the short size and tall size (8 oz and 12 oz cups)

2 shots of espresso in the hot cup grand and venti size (16 oz and 20 oz)

3 shots in the iced venti size (24 oz cup)

Starbucks uses the "Espresso Roast" in their coffee. It's a dark roast coffee (bold). I used to work there and that's exactly what they use. You can buy it at any Starbucks you go to! Very nice coffee. :)

All "shots" are one ounce......alcohol, syrup, espresso, whatever...

Starbucks uses espresso beans to make its espresso. You can purchase them in store. Better yet, find a good tasting brand of coffee and use theirs. Try Peerless out of Oakland, CA ($10.45 for 1 lb, available whole bean or ground to your specifications).
