as many as logically makes sense. There is a limitation of like 10,000 URL's in a sitemap.

Be sure if you create multiple, to use a sitemapindex to link them all.

Google actually recommends to have a different sitemap for every 100 pages. I think it's extreme, I have 1200 pages and only one sitemap. If you are an authority site Google will index your new pages faster than your sitemap. But, the sitemap will help Google find deep pages that are connected with Java Script Links or even most flash links.
