The average is about 250 songs per gig.  8 gigs should yield about 2000 songs.  Average is base on a song being around 4 megs.  The  apps depends on the size.  [(number of gigs)*1000] divided by size of app(in megs) will give you an approximation. i.e.  an app that is 400megs on an 8 gig ipod would be 8000/400=20 apps.  Hope that helped.
