There are around 10,000 stars in the whole sky bright enough to be visible to the naked eye from a very dark site.  At any one time of the night you can only see at most one half of the sky but over the course of a night you can see a varying fraction of the whole sky depending on your latitude.  Then you have to factor in a bit for obstructions of your horizon and then the real killer is the sky brightness which will depend on the phase of the Moon and your local levels of light pollution.
