  1. Anchovies and Sardines are less baitfish but a food source!! I guess 99% of those taken from oceans are eaten rather than used as compost/fertilizer or bait!!

Well, I work for a wholesale grower and we use only synthetically produced time-release fertilizer.  So in my case the answer would be: none.  In fact, most of todays farmers don't use actual fish byproducts.  I have a neighboring family that is Korean and they do put a dead fish under each plant that goes in the ground... but this is not common American practice.
