There are three main types-- carom--pocket--and snooker.

There are only three games that are the most important that is three ball, eight ball and nine ball. Most player are familar with these games. Can I give you some advise. The games and strategies are easy to learn. The stroke is the most important. I can tell the level of pool player by observing his or her stroke. Then by putting a little pressure on them. There isnt a better feeling than when your in stroke and you can make that cue ball dance on that table like you want it.

That's kinda like asking how many card games exist.  You can play as many games as you can think up on a pool/billiard table.  There's 8 ball with endless variations (bank, last pocket, etc), 9 ball, straight pool, snooker, 7 ball, 15 ball, cut throat, 3 ball.

There are sooo many variations, my favorite is cut-throat! But there is a game for everyone...so many options, so little time!
