In our town you can be held responsible for anyone who leaves your party in an impaired state.  Therefore, it is considered wise to provide no more than two drinks per person.  You can have a pay-per-drink bar set up for those who want to drink more.  That would take the responsibility off your shoulders and would make them responsible for their state of inebriation.  It would also be a good idea to have an exit plan for those who might not be in a state to be driving.  You could pay someone to provide taxi service or pay someone to drive them home.
