  1. u need a heat/loss gain calculation done...plus u need the chart that tells u how much tonnage for some many people.....off the top of my head....400 sq ft to the ton so about 10 -12 ton.....

  2. Depending on equipment load, human load, building construction, location, windows, doors, ceiling height, and a few other factors between 10 and 40 ton.

  3. wwwstat is right in that you'll probably need 2 units. Actually, in the kitchen area, you might get away with using evaporative cooling. Most county health codes don't permit return air to be installed in commercial kitchens, so evaporative cooling coupled with exhaust fans are usually the order of the day. Your health department doesn't want the odor of cooking foods to permeate the dining area, so they usually require separation in the HVAC systems. You'll need to have a commercial HVAC contractor run a Manual N load calculation for the restaurant. Make sure he's familiar with your local health department codes.

  4. actually you would need 2 units ...one for the eating area with a thermostat on a wall away from the kitchen...the other unit would be for the kitchen.  i would call in a respectable hvac company and discuss this with them...the reason for twounits is this...in order to keep your workers cool in the kitchen with one unit big enough to cool the whole restaurant you would have to freeze your customers in the dinning area...or it would be the other way around the customers in the dinning area would be comfortable and your workers in the kitchen would be suffering from the heat....
