  3. If you want a fountain that runs beautifully and tastes good, this isn't as straightforward as people are saying it is.

    It depends on the chocolate you're using.  If you're using a chocolate from the grocery store you need to add less chocolate because you also need to add vegetable oil which increases the chocolate "volume."   How much oil is going to depend on how thick the chocolate is (every brand and formula of chocolate is going to be different).  Therefore, how much chocolate you add, and the ratio of oil, is going to vary by the brand if you use chocolate that isn't formulated for a fountain.

    I personally won't eat 30-40% oil in my chocolate (gag) so I spend a bit more money and get chocolate from Chocoley (they're Just Melt It! chocolate is formulated for fountains, and you don't need to add any oil to it).  You can also get fountain  chocolate from Sephera and a couple other companies (can't remember their names), but IMO Chocoley is definitely the highest quality/best tasting of the bunch that don't need oil (it's also the most expensive, but you get what you pay for).

    With the Just Melt It! or other fountain formulated chocolates, you need to use more than chocolate than you would if you were adding oil (because oil isn't adding to that chocolate volume).

    You've also got to remember to have enough chocolate to keep it running properly as people eat, unless you want a useless drip of chocolate.   So you need to calculate both the minimum to run your fountain (probably about 2.5 lbs of chocolate that doesn't need oil) + the chocolate to feed the number of people that will be eating.

    Expect to have leftover chocolate if you want your fountain to run properly through your entire event.    Just pour the chocolate back into the tubs (if you use the Just Melt It stuff) or into a tupperware container if you use another brand.   You can reuse it for things like pouring over ice cream and dipping berries.  (I dunno if I'd save chocolate I added oil to though.  It doesn't actually taste good... the only reason to use a chocolate fountain if you're going to add the oil is for decoration.  The amount of oil you have to add seriously kills the flavor of even the most expensive chocolate).  

    I've pasted a link to a good resource about other fountain tips.  If you follow their ideas you'll be leaps and bounds ahead of where you are with just the directions that come with your fountain.

  6. We used 2-3 bags of milk chocolate morsels.  Don't forget to add the veggie oil for smoothness.
