How much cholesterol does bone marrow contain? Bone stock seems like a tasty alternative to red meat bits

I boiled a few large bones for their marrow to make a soup. I have found that using this instead on meat helps make vegetable dishes tasty and cut out cholesterol. However, I noticed that when the soup cooled to room temperature there was a lot of white greasy stuff that appeared at the top. So I am wondering if I traded the devil for the deep sea.

    Marrow is very RICH in fats

    They turn white when cooled (does lard remind you)

    NOW If you are not genetically defective you have no problem..

    what I'm saying is your body will use what it needs from the food you give it.. Stress over nonsense "No Help"

    But I still like the tasty red meat bits.to add texture and fiber to my vegetables..
