Also, do you have to go through customs or anything if you are going to the Carribean or Jamaica?

  3. Usually there is a gratuity for your waiter, assistant waiter, housekeeper and other workers, depending on what you do and what services you use.  They will usually give you the recommended per day (and per person) amount either on the website or on board.

Depending on your boat/cruise line, there are some restaurants on board that are an additional fee or have a reservation fee.  There are usually pictures that you can buy on board too (some for formal nights, some at each port of call).  There's also gift shops on board.

In addition to the ticket cost, there are trips/tours at each port of call that you can add on.  You don't have to do these tours and can arrange for other tours or to go on your own, but the tours that are offered by the cruise line are convenient (often includes food and usually includes a bus or transportation to pick you up right from where the boat docks).

Assuming you are coming/going to Jamaica from the US, you will have to go through customs somewhere, usually in Florida.
