generally speaking in restuarants food is one of the lesser expenses, normally bought in bulk and much lower cost then supermarkets. The big costs are the building, staff costs and taxes. In order to improve profits you either have to get bums on seats (mcdonalds style) or charge more for meals. Restuarants may look profitable on weekends but who dines out on a cold monday night the week before payday. One of the big money makers in restuarants is wine, the mark up is often four or five times. In the uk restuarants are the type of new business that close down the most.
