How much does it cost to start a coffee shop?

Hello,

I am a college student at the University of Phoenix. I am working on my final project which is to convince a committee that building a coffee shop/bakery in our office building will boost employee moral and be profitable at the same time. There are other companies in the office building and it will benefit them as well.

By chance, does any one know how much the initial cost is of building a coffee shop in a pre-existing building? Most of the information I have found is to build a coffee shop from the ground up... and that is not what I am doing. I already have a building; I just need to build the inside.
