Question:

How much does the meat on a full slab of ribs weigh??

I'm not interested in the weight of the entire rack of pork ribs, but more specifically the weight of the meat on the ribs.

Does anyone have any idea??? I suppose I could save all of my bones and weigh them after first weighing the full slab of pork ribs. I couldn't find the answer to this question anywhere.

  1. Depends on the ribs.

    baby backs have smaller bones so the meat yeild is better.

    Large ( full) racks have alot more bone( and alot thicker bones) so the meat yield is less per pound.

    Then alot has to do with who butcher porky and how much meat was left on the ribs.

    Some companies IE "Lundy's" have a much higher meat level then a cheaper brands.

    So I would say with babybacks 45 to 50% meat and with full slabs and about 35 to 40% meat ( depending on the packer).
