I have volunteered to make a taco dinner at our church for Vacation Bible School volunteers. I am making a taco dinner.

How much meat do I need for 50-60 people for tacos?

What other dishes can I serve along with it, and how do I keep them hot and how much of it should I make? (I don't have any chaffing dishes!)

  1. tacos dont hold up for very long so i hope you are making them to order! you should assume at least 2-3 tacos per person and 1 lb of chopmeat makes about 10 tacos so like 6 lbs of meat should be ok

    you will also need the condiments! i add lettuce, tomato, sour cream and cheese to my tacos

    you should make cheese quesadillas. just cheese and tortillas and you can cut one up into 6 pieces and you can make a bunch in advance


  2. First, borrow 3 crock pots.

    One crockpot to keep the ground beef warm.  15 lbs will be more than enough (1/4 lb per person).  I add fresh mild salsa to mine to keep the meat moist, add favor and it looks pretty.

    Second crockpot to keep spanish rice warm.  Half a cup (cooked) per person will do.

    Third crockpot for refried beans.  You can buy premade refried beans in 1 gallon cans.  Get 2 just in case.  You can also use some to mix with salsa for bean dip.

    Chopped lettuce, tomatoes, olives, onions, along with shredded cheese, salsa and sour cream will keep everyone happy.  Get tortilla chips too, that way people can make nachos if tacos don't suit their fancy.

  5. Here are some ideas that might help you with your church dinner:

    1.  Plan on two tacos per person.  Each taco should contain about 1/4 cup of meat, or two ounces.  Plan on purchasing 15 pounds of ground chuck, unless you want to add a "filler" to your taco meat such as oatmeal etc.

    2.  Purchase the enormous bags of shredded lettuce and cheese at someplace like Costco.  Plan on 1/4 cup lettuce and 1/4 cup cheese per taco or less.

    3.  Chopped tomatos, onions, olives and sour cream:  plan on 1 tablespoon each per person per taco.

    Side dishes usually include any or all of the following:

    1.  Spanish Rice

    2.  Black beans or refried beans

    3.  Enchiladas

    4.  Salad with spicy dressing

    5.  Warm flour tortillas

    6.  Chips and salsa
