How much hominy?

I have 4 lbs of (uncooked) menudo. How much hominy is a good ratio to use?

  1. 3 pounds of hominy for every 2.5 pounds of beef.  This will vary, however, depending on how thick your menudo is.  If it is thick, you'll want to add less hominy because it will soak up more water.

  3. 1  med can of hominey for that amount of meat , i use 1 # 10 can ,but i do about 20 lbs of tripe ,4-split pigs feet and 2-beef feet  1/4rd , and always cook all the meat till tender ,add the chile ,salt and at the last 10-15 minutes i add the hominey ( white ) if i use the yellow i allow 30 -45 minutes cause it's a bit tougher. reseason let rest and serve ( add a bit of oregano sprinkled on top when you turn of the heat ) .
