You don't "rent" a cruise ship. You can reserve rooms. If there are more than 50 staterooms and you are using double occupancy, you would be required to pay the daily rate for each room you don't use if you do not want others on the ship.

You could charter a private ship, or more than one smaller ship.

Can't do it easily.  In order to reserve a cruise ship, you have to pay for all of the rooms in advance.  It also needs to be planned a couple of years ahead, as the cruise lines schedule their itineraries about 18 months ahead.  It would probably cost several million dollars up front, plus an irrevocable letter of credit.  Better to book a group.  You can get a discount, and sometimes even preferred treatment if you book enough cabins.

I believe that you are looking to rent or charter a yacht, not a cruise ship.  Even a small cruise ship holds several hundred people and if you want it all to yourself, you would have to pay for every room.
