How much % of the brain do people actually use?

We use it all. Just not all at once.  PET studies have shown that the area needed becomes active, while other areas "idle down". So there is no real answer- it all depends on what you are doing at the time.

As a neuroscientist who has been studying the brain for more than 2 decades, I can tell you with certainty that we use 100% of our brains, and all the cells therein.  It is a ridiculous myth.
