How much to charge for last minute cake(s)?

I run a small catering business and have been asked to make a last minute cake for an event. I usually contract out for cakes, but don't have time, so I'll be doing it myself. I'm just starting up in Arizona after operating in California, so I'm a bit unfamiliar with what people expect to pay here.

  1. What's the difference between CA and AZ...not much.  

    Just run your business the same way you always do.  The most honest thing you can do, if a last minute cake is that big of a deal, is charge what you typically charge + 15% or so.

    You can't really just make up a number because you feel like it.  Either you do it right, or if it's too much of an issue, tell them you can't do it.


  2. Charging a "rush" fee is completely acceptable. Keep in mind any inconvenience or stock issues the last minute orders may cause when determining what the "rush" fee should be.

  3. Just make it what you think your work and effort is worth.
