How o you cook jollof rice with it going mushy? How much rice to sauce o water ratio?

EVerytime I make it, it either comes out too mushy or it comes out unevenly cooked. Some uncooked grains in it

  1. With Jollof Rice it is best to cook your veg and get the broth ready adding it after you have moistened the rice in the oil, veg and tomato product, and as the first lady said 1 measure of rice to 2 measures of water or broth.

    Now if your using a cup measure remember water is measured differently, that is why I use 2 similar size vessels one for dry and one for wet, and I cook my Jollof rice in the oven with a lid on the pot, I have a Stainless Steel one with a nice lid, if you do not use a piece of waxed paper and foil wrap/aluminum and cover it cook it at 350 d F or 180 d C if your using a gas stove gas mark 3, in for 30-45 minute, let it stand for 5 minutes take of the top and fluff it with a fork, add some chopped parsley or scalloins.


  2. 1 cup of rice+ 2 cups of water
