Ok, first of all congrats on the choices you've made. Good stuff. Secondly, there's a few things to bear in mind here.

Of course you'd want to connect your PS3 and your projector with HDMI. This is one of those times when you really should invest in a good quality cable (yes, it can differ sometimes).

Set your picture output to 720p. No need to go to 1080i. It's basically the same resolution and your projectors' native resolution is exactly 720p. DON'T FORGET!  Disable sound in the HDMI setup and connect it through an optical cable to your HT set/receiver. ALSO! Turn on your speakers on before using the PS3. Otherwise it might still output sound through HDMI. Oh..and.. kill the volume on your beamer...but I guess you already knew that. Have fun!!
