How popular or in demand is a professional chef that specialises in authentic Mexican Cuisine?

The question is on AUTHENTIC Mexican cuisine not Tex-Mex , and I was thinking more in Europe, Australia or New Zealand.

  1. There must be many places in Europe where this cuisine as it truly is is appreciated, I would not suggest America because the concept of Mexican cuisine has been distorted by so many stereotyped offensive chains selling quasi mexican fare. The one problem is getting the real ingredients and these need to be available, wherever you go. I heard that Tokyo had a Mexican restaurant and that might be worth a try.


  2. probably not very much, there is plenty of Mexican's in America now authentic Mexican cuisine is not hard to come by and it's more street food then anything else

  3. I say there is a definate need. I find there is not enough authentic Mexican chef's around. I mean that's cooking with Tripe an Ox tail ect. You know what I mean? I'm so sick of Tex-Mex c**p. I say ish. I love going to little taco restaurant's and getting 7 seas soup, and tacos de tripa y cabesa. mmmmm..getting hungry now. We drive 5 1/2 hous also to get these things. I cannot cook it the same.
