You can shift up or down on a motocross bike by just letting off of the throttle. I wouldn't try it on any other type of motorcycle personally.

you can't shift down, but you can shift up. release the throttle and kick the shifter up.

you cab only shift up if you shift down you WILL strip the gears

you just let off the throttle some, and shift up or down

although by doing this you  do ruin you transmishion quicker
