Question:

How should I grill top quality steaks on my charcoal grill? Indirect grilling or on direct heat?

I like steaks rare or medium rare. Although one person I will be cooking for like them well done (believe me I can't understand why he likes them like that).

How should I do these steaks? I think they're strip loin. They were very expensive and they are beautifully marbled.

I always use a charcoal grill because the flavor is 10,000 times better than gas.

Any suggestions?

  1. I put them over direct heat for just a few minutes to seal in the juices then move away from heat.Put the first one on for well done about 4 minutes before the others.cook them for about 15 to 20 minutes.

  3. Start on direct heat to sear the juices in. then move to indirect heat.

    remember to start the well down steak first.

    season the steaks about 2 minutes before taking off the grill.

    Let the steaks rest for 2-4 minutes before serving.

    Put on plate and cover with foil paper to keep hot.

    OK, this is what I do...

    1.) Take some olive oil (or any veg oil) and drizzle on the steaks. Rub to coat on both sides. (Don't go crazy...just a drizzle!)

    2.) Shake on some Montreal steak spice. This stuff is amazing. If you don't have it, just make sure you season well. (S&P)

    I get the grill going about 30 mins before I need it and then grill them. If you want those s**y grill marks, take notice how you lay the steaks on the grill and give it a 1/4 turn after a minute or so. DON'T move them around all the time, let them do their thing.

    Also, take notice of how the steaks felt raw. The more they cook, the firmer they will be.
