How should I store a Katz's deli hard salami?

I just got shipped hard salami from Katz's. How should I store it? Should I slice it all and put it in the fridge? Can I freeze some of it?

  1. Lucky you. With the casing intact, salami will keep for a long time, but once it has been cut, it should be kept refrigerated for two to three weeks or it will dry up. Salami is best served at room temperature  I would think you could slice some & freeze - either in a food saver or zip-lock bag.  I would press all the air out first.
