  1. I have not hemmed any lately, but in the past I turned up the hem and used a double needle and sewed as close to the cut edge as possible. It takes some patience because you will be sewing from the outside of the fabric.  Also you may serge the edge and then turn it up and use a one or two needles machine hem.   Test either process on a scrap first.

    A stablizer will keep the interlock from stretching.

You have several options for hemming interlock, all allow the fabric to stretch while wearing.  Since interlock is usually used in casual sporty styles a simple topstitched hem is the easiest and best looking.  If your machine is capable of using a twin needle, then turn up the hem once, press lightly and use a twin needle and a straight or zig zag stitches and tops stitch on the right side of the fabric  If you can't use a twin needle in your machine, then once again turn the hem once, press, and use a narrow zig zag stitch on the right side. Invisible hems on interlock are difficult, for interlock it's okay for the stitches to be visible but if you want an invisible hem: use the machine's blind hem stitch. Follow the instruction manual and you will have a reasonably hidden hem.  Don't hand hem interlock, it looks bad and the hem doesn't hang well. And never ever double fold a hem in cotton interlock, the hem will curl up and it could form odd ridges.,If you have a cover-stitch sewing machine, then use a two thread cover stitch and use woolly nylon or polyester in the chain looper.  It's what professionals (like me) and factories use when hemming interlock.
