If you are a beginner about up to just below your chin.  Intermediate from below your chin to your nose.

Advanced from your mouth to your forehead.  

If you are lighter then go a little smaller.  If you are bigger then you can go a little longer.  

Most decent shops can help you out.  If you go to a ski area and rent skis they will make you fill out a form that they will use to pick out the right size for you.

Downhill race skiis should be according to FIS regulations. For recreational skiing on a shaped ski, between your chin and forehead, depending on your skill and weight.
