  1. liquids boil at a lower temperature as the pressure is reduced. In a near vacuum, water and similar liquids will boil at room termperature.

    This allows you distill liquids without applying heat, which often will do things that you don't want, such as changing flavor.

    For example if you distill tea, you can boil off all of the water and be left with a powder for instant tea. Doing the same thing by applying heat will change the flavor of the tea.
