  Looks like he's using a dremel tool.

It's definitely not a real egg, it must be something in the shape of an egg, with color layers underneath. It's all carving, patience, and care.

to me it looks like they use some tiny drill thing to trim it

Oh, I think they're real eggs.  It wouldn't be impressive if they weren't real eggs.  And, yes, he appears to be using that tool in the first two photos.
