What are some of the things worth mentioning in the by laws?

There are several things to specify in a volleyball tournament.  I'll give you an example of a few if you have a 10 team tournament:

Specify that the 10 teams be broken down into 2 pools of 5 teams each.

Specify that pool play shall consist of round robin two games against each team (adjust this if you don't have enough time).

Specify a schedule with a work team to call the lines at each match.

Specify the game scores, and caps if necessary.

Specify that two teams in each pool will go to playoffs, and also several tiebreakers.

Specify penalties for teams arriving late.

Specify a code of conduct.

Specify player and coach eligibility.
